Sourcing Premium Cacao Beans
We select heirloom cacao beans directly from smallholder farms in Ecuador, Peru, and Madagascar. Farmers grow these high-quality Trinitario and Criollo varieties using regenerative organic methods. These practices protect rainforest biodiversity and follow fair trade standards.
The farmers ferment the beans naturally for 5–7 days. Then they sun-dry them. This process builds deep, complex flavors like bright citrus, red berries, nutty notes, and floral undertones.
Our Small Batch Chocolate Making Process
Our team hand-sorts every batch of cacao beans at our craft facility. We roast the beans at low temperatures to protect their delicate aromas. Next, we crack and winnow them to reveal pure cacao nibs.
We stone-grind these nibs in traditional granite conches for 48 to 72 hours. This long conching creates our signature silky texture. During this stage, we add organic cane sugar, single-origin cocoa butter, and premium functional mushroom extracts. We also include natural flavors like Madagascar vanilla, California almonds, Indian cardamom, and saffron.
We never use palm oil, soy lecithin, or artificial additives in our organic chocolate production.
Precision Tempering and Aging
Our chocolatiers temper the mixture on marble slabs with precise cooling. This step gives each bar a perfect snap, glossy shine, and luxurious melt. Workers hand-mold the chocolate, cool it slowly, and age every bar for at least 14 days. Aging allows the flavors and functional mushroom benefits to reach full harmony.
We produce limited micro-batches of no more than 50 kilograms. This approach ensures exceptional quality and attention to detail in our bean to bar process.
